Ian you sounded just like myself about 18 months ago. I too I'm a lefty so join the club. I love the tiny actions with small calibers, in particularly the sub calibers. You've just about covered the basics of mini actions add these to your list. Currently, Sako is not supplying just raw M75 actions, call Stoeger and write Sako, maybe it will help to get some imported in 2000 or 2001. The possibilties are limitless, granted the Rem M7 is larger but you could find one in 223 and have the barrel set back and rechambered for 221 FB or rebarreled for 17 MK4 or 17 Javelina. I have an Ruger 77H that I will eventually convert to 17 Ackley Hornet, no recoil very little noise, good little bang around gun. Just the thing for 100-150 yds shots with 20 gr Vmax bullets.
Cascade Arms Cub: mini-mauser style thats 7.5 inches log
Ultra Light Arms M20: basically a mini Rem 700 that takes a Jewell trigger, very sweet but spendy about $2300-$2700 retail. If I money was not the question this would be it, 221 FB-candy apple green-talk about pretty can you look through the clear coats, 20" bead blasted satin Douglas barrel and a Jewell HVR 2 stage trigger set at 1 pound.
I've been toying with the idea building of a mini round, solid bottom Rem 700 type action . The hardest part for me is the 3 lug coned bolt and firing pin design.
